Winter warmer

It got bloody cold over the last few days. Winter is definitely here. And what is better to warm you up that a good homemade soup !

We own a Thermomix so it is soo easy to make. It just cooks while you’re doing something else! But of course, it is very easy to make if you do not have one.

If you have kids, you might be better off with omitting the ginger and cayenne pepper (Muuuum! it’s too spicy!) and the coriander leaves (Muuuum! what’s those disgusting green bits floating in the soup????)I’m already quite lucky they don’t find the soup is too orange…

Ingredients

  • 2 shallots
  • 20g vegetable oil
  • 2cm ginger
  • 600g carrots in medium sized chunks
  • 500g water
  • 200g coconut milk
  • 1 vegetable stock cube
  • 1 pinch dried thyme
  • Coriander leaves
  • Salt and pepper to taste
  • Cayenne pepper (optional)

Prep (with Thermomix)

  • Mix shallots and ginger  5 sec / speed 5
  • Scrape sides, add oil and carrots 
  • Cook 5 minutes /100º/Speed 1
  • Add water, stock cube, salt, pepper, thyme and cook 35 minutes/100º/Speed 1
  • Add coconut milk
  • Mix 1 minute/Speed 10 (increase slowly form speed 1 to 10 and hold the cap with a kitchen towel to avoid hot projections) 
  • Pour in bowl and add coriander leaves

Prep (without Thermomix)

  • Chop shallots and grate  ginger
  • Put shallot and ginger in a pan with oil and carrots and cook for 5 minutes on medium heat or until shallots are tender.
  • Add water, stock cube, salt, pepper, thyme and cook 35 minutes (or until carrots are cooked) Transfer to a blender
  • Add coconut milk
  • Mix on high speed until desired consistency is reached. 
  • Pour in bowl and add coriander leaves
