A better start – homemade granola

I used to have a black coffee only for breakfast. Or half of it actually… If you have kids, you know how long it can take to drink a whole cup of coffee when they are around.

Well this is the first thing I changed in my lifestyle (not the kids obviously…) : I now have something to eat for breakfast on top of my half, cold cup of coffee.

I had tried to have toasts, a viennoiserie or cereals before. But after one hour, I actually felt hungrier than when I only had coffee.

Then I tried granola with honey, berries and yogurt during a week-end away. And I liked it so much I knew it would become one of my go to breakfast.

But I have always been a bit concerned about how much sugar they put in the granolas you buy at the supermarket. So I have decided to make my own. Here’s my recipe :

Ingredients

  • 200g rolled jumbo oats
  • 100g nuts (hazelnuts, almonds, nuts, pistachios, cashew nuts…)
  • 2 Tbsp coconut oil
  • 4 Tbsp agave syrup / honey / maple syrup
  • 1 Tbsp vanilla extract
  • 1 pinch of salt

Preparation

  1. Place all the ingredients in a mixing bowl and mix everything with a fork
  2. Line a baking tray with a silicone baking sheet (or just grease the tray if you prefer) and spread the mix homogeneously on it.
  3. Bake for 30 minutes in the oven (oven must not be pre-heated) at 150ºC. Give it a good toss every 10 minutes so it does not burn.

You can store in in a food storage box for a month in your pantry.

Feel free to mix the nuts / add dried fruits / chocolate chips !

I usually make mine with hazelnuts and almonds and have it with hazelnut milk.
